Château de L'Aulée
Located on the right bank of the Indre river, Château de l'Aulée and its cellars were built in 1856 by the Cordier family, merchants from Bordeaux. Champagne Deutz bought the estate in 1973, restored it, drained the land and replanted the entire 37-hectare plot with Chenin, a terroir and grape variety ideally suited to the production of top-quality sparkling wines. The estate's production is divided between still AOC Touraine Azay-le-Rideau wines, and sparkling AOC Touraine Méthode Traditionnelle and AOC Crémant de Loire wines.

Les Truffes noires ‘Tuber Melanosporum‘ cuisinées au restaurant proviennent des truffières du Domaine du Moribot qui comptent 20 000 plants truffiers sur 12 hectares. Les Truffes d’été ‘Tuber Aestivum‘ sont fournies par des petits producteurs en Touraine. Les arbres sont cultivés selon un ensemble de pratiques qui permettent la production précoce, régulière et pérenne de truffes. Le travail du sol, la surmycorhization, la taille et l’irrigation sont effectués aux moments clés du développement de la truffe.

Domaine de Cray
Domaine de Cray's expertise has been handed down through 5 generations. Spread over 75 hectares, the vineyard is located on the limestone plateaux overlooking the Loire between Tours and Amboise. Our fine bubbles: BRUT DE CRAY acquires its qualities through long fermentation in bottle, in the coolness of our tuffeau cellars, followed by several years' ageing, to produce bubbles of great finesse. We blend grape varieties (Chenin, Chardonnay, Pinot Noir, etc.) and sometimes vintages, to create cuvées whose finesse rivals the structure and bouquet of the others. The charm of its natural seduction reaches its peak when served chilled at between 6° and 8° in a flute, it allows the abundance of its mousse and the finesse of its bubbles to blossom. Our still wines: Chenin, also known as Pineau de la Loire, is used to make the A.O.C. Montlouis sur Loire. Depending on the vintage, it can produce dry, semi-dry, sweet (late harvest) or sparkling wines using the "traditional method". Its terroir character is enhanced by bottle-aged secondary aromas.
