Le Domaine de Cray
The expertise of Domaine de Cray has been passed down through five generations. Spanning 75 hectares, the vineyard is situated on the limestone plateaus overlooking the Loire between Tours and Amboise. Our sparkling wines: Through a long fermentation process in bottles within our cool tuffeau cellars, followed by several years of aging, the BRUT DE CRAY acquires its exceptional qualities, offering bubbles of great finesse. We blend different grape varieties (Chenin, Chardonnay, Pinot Noir, etc.) and sometimes vintages to create cuvées, where the finesse of some rivals the structure and bouquet of others. The charm of its natural allure reaches its peak when served chilled between 6° and 8° in a flute, allowing the abundance of its mousse and the delicacy of its bubbles to unfold. Our still wines: Chenin, also known as Pineau de la Loire, is used to produce A.O.C. Montlouis sur Loire. Depending on the vintage, it can produce dry, semi-dry, sweet (late harvest), or sparkling wines using the traditional method. Its true terroir character is revealed in the secondary aromas that develop with bottle aging.

La Truffe de Jacote
The origins of the truffle are difficult to pinpoint, adding to its enduring mystique. Some claim it was first discovered in ancient Egypt (2600 BC), while others locate its origins in ancient Rome or Greece. The fresh truffle is a fungus that grows at the base of certain trees, such as oaks, hazel trees, linden trees, and poplars. Truffles can be found in France, Italy, Spain, Australia, and many other countries. Harvesting fresh truffles, known as "cavage," takes place in season, either in the wild or in truffle orchards. There are dozens of truffle species worldwide, but only four or five are highly sought after for consumption.
